Long associated with winter soups and family meals, the leek remains one of the easiest vegetables to cook. Its mild flavor makes it a good accompaniment to meats, fish, eggs, or potatoes. It can be enjoyed in a fondue, gratin, tart, vinaigrette, or simply sautéed.

Low in calories and high in water, leeks provide fiber that contributes to healthy digestion. They also contain several vitamins and minerals, including vitamin K and vitamin B9. An economical vegetable from which almost everything can be cooked

To prepare it properly, split it lengthwise before rinsing it thoroughly, as soil can get trapped between its leaves.
